Brazo gitano de nata
Here is a practical recipe to prepare a brazo gitano de nata. A brazo gitano is a cake that can be filled with different ingredients: chocolate, jam, creams, and decorate in various ways. In this case, the filling will be cream and sugar. You can cover it with chocolate, decorate with fruit or just eat it alone as that is just as tasty.
It is a dessert ideal for surprise guests when you don't have too much time, because not only is it delicious but it is also very easy to prepare. Makes four servings, and takes no more than 45 minutes to have it ready.
For the dough:
- 140 grams of flour
- 140 grams of sugar
- 35 grams of butter
- 5 egg yolks
- 5 egg whites
- 1 pinch of salt
- Lemon zest
For the filling:
- 500 grams of cream to mount
- 100 grams of sugar
In the first place, have the yolks in a container and incorporate the sugar. Beat with an electric mixer or with a wooden spoon vigorously until you obtain a fluid foam. Pass the flour through a sieve over the egg yolks sugar-sweetened. On the other hand, melt the butter and add it to the previous preparation.
Beat the egg whites with a pinch of salt to snow until well firm. Add them to the mixture prepared previously. Knead with hands until homogeneous.
Line a mold of rectangular shape with kitchen paper or paper greased and sprinkle with a little flour. Arrange the dough in there and roll it until you have ½ inch of thickness. Bake the dough in preheated oven at 180 º c for approximately 15 minutes. Sprinkle with a little more flour and cover with more paper. Remove from the oven and leave aside to cool.
While it cools, make the filling by beating the cream with half the sugar. Extend the padding on the mass of the arm gypsy and roll it with help of the paper. Remove the paper, decorate to taste and sprinkle with sugar.
